When reading the name and description of this Southeast Asia inspired beer, you might have to think twice about what will be coming through the tap. No, we’re not pumping in soup through our lines and into your glass. It is the next in line collaboration brew with the Labrewatory, Imperial Organic Yeast and Everybody’s Brewing.ingredients for labrewatory's collaboration brew Jess Caudill from Imperial Organic Yeast in Portland, Ore. And Everybody’s Brewing in White Salmon, WA. came to the Labrewatory to create a new beer with Charlie Johnson, the Labrewtory’s House Brewer. The beer Jess came to brew is an herb-spiced beer While thinking about what he wanted to make for dinner one night, Jess thought that the traditional ingredients in the Thai chili soup Tom Kha would make for a great beer. This beer, Tom Bro Kha, is a light lager with a malt backbone and is made with a 20 Citrus yeast strain from Imperial Organic Yeast, which adds an orange and lemon aroma to the beer. But that is only where this beer begins. While in the whirlpool, Jess added in the far-east adjunct ingredients of lemon grass, Thai chilies, fish sauce and coconut milk. For a little while during brewing, we turned our whirlpool into a soup pot! jess cauill from everybody's brewing at labrewatoryJess and Charlie wanted to make sure these complex ingredients were layered in hopes of creating a memorable experience for the drinker, while having the flavors melt together seamlessly. Each ingredient has its purpose in the beer to give an overall taste sensation; the coconut milk to give a smooth balance to the chilies and fish sauce; an added kick from the little spicy green peppers; saltiness from the fish sauce; a backend aromatic flavor from the lemon grass. Then during fermentation, limes, mushrooms and coconut flakes were added. All in all, giving you an incredible craft beer experience. Thai soup inspired beer may sound way too crazy for some beer drinkers or sound right up another beer drinker’s alley. That is the core of what we want to accomplish in our brewery. We want to see the most outrageous ideas for beer, because here at the Labrewatory there is no idea too ambitions or ridiculous.
